Sweet Potato & Black Bean Chili Recipe
Ingredients:
1 Tablespoon Olive Oil
1 Green Pepper, Diced
1 White Onion, Diced
1 Sweet Potato, Peeled & Cubed
1 Can Organic Black Beans, Drained
1 Can Organic Fire Roasted Tomatoes
1 Can Organic Tomato Sauce
1 Cup Vegetable Broth
1 Packet Organic Chili Powder
Directions:
Chop onion, sweet potato, and green pepper
Sauté with 1 tablespoon olive oil for approximately 8-10 minutes
Drain beans, fire-roasted tomatoes, and tomato sauce get added to cook veggies.
Combine and cook for about 3-5 minutes before transferring to slow cooker
Combine all ingredients in the slow cooker, including chili packet and 1 cup of veggie broth
Stir well and cook on high for 3-4 hours
Add desired toppings and enjoy!
