Carrot Ginger Soup Recipe
Ingredients:
1 lb carrots, peeled and chopped
1 onion, diced
2 garlic cloves, minced
1 tbsp fresh ginger, grated
4 cups low-sodium vegetable broth
1 can (14 oz) coconut milk
1 tbsp olive oil
1/2 tsp ground turmeric
Salt and pepper to taste
Juice of 1 orange (optional for added sweetness)
Fresh cilantro for garnish (optional)
Directions:
Add the carrots, onion, garlic, ginger, olive oil, and vegetable broth to the crockpot.
Cook on low for 6-7 hours or on high for 3-4 hours until the carrots are tender.
