Minty Chocolate Bliss: Easy Peppermint Brownies Recipe

Makes 9 Brownies

DRY INGREDIENTS

  • 1 cup gluten-free flour blend (like Bob’s Red Mill)

  • 1 ½ cups coconut sugar

  • ¾ cup cocoa powder

  • ½ teaspoon baking powder

  • ¼ teaspoon sea salt

WET INGREDIENTS

  • ¾ cup + 2 tablespoons melted butter (or coconut oil)

  • 3 eggs

  • 1 tablespoon pure vanilla extract

  • ⅔ teaspoon pure peppermint extract

ADD INS

  • ½ cup soy-free dark chocolate chips (like Enjoy Life)

  • ½ cup chopped walnuts (optional)

Direction:

  1. Heat oven to 350 F. In a large mixing bowl, whisk together the dry ingredients. In a separate medium mixing bowl, whisk together the liquid ingredients.

  2. Add the wet ingredients to the dry ingredients and stir lightly - just until a batter forms. (Do not overmix...it's OK if the batter is slightly lumpy.) Fold in the add-ins.

  3. Pour the batter into an 8x8” baking dish lined with parchment paper. Bake for 35-45 minutes or until a toothpick inserted into the center comes out with a few crumbs.

  4. It is best not to overbake, as the batter will continue to set a bit after it cools. Let cool completely before cutting into squares.
