Minty Chocolate Bliss: Easy Peppermint Brownies Recipe
Makes 9 Brownies
DRY INGREDIENTS
1 cup gluten-free flour blend (like Bob’s Red Mill)
1 ½ cups coconut sugar
¾ cup cocoa powder
½ teaspoon baking powder
¼ teaspoon sea salt
WET INGREDIENTS
¾ cup + 2 tablespoons melted butter (or coconut oil)
3 eggs
1 tablespoon pure vanilla extract
⅔ teaspoon pure peppermint extract
ADD INS
½ cup soy-free dark chocolate chips (like Enjoy Life)
½ cup chopped walnuts (optional)
Direction:
Heat oven to 350 F. In a large mixing bowl, whisk together the dry ingredients. In a separate medium mixing bowl, whisk together the liquid ingredients.
Add the wet ingredients to the dry ingredients and stir lightly - just until a batter forms. (Do not overmix...it's OK if the batter is slightly lumpy.) Fold in the add-ins.
Pour the batter into an 8x8” baking dish lined with parchment paper. Bake for 35-45 minutes or until a toothpick inserted into the center comes out with a few crumbs.
It is best not to overbake, as the batter will continue to set a bit after it cools. Let cool completely before cutting into squares.
