Healthy and Delicious Pulled Chicken Tacos Recipe

Serving Size: 4 servings

Ingredients:

  • 2 Boneless, Skinless Chicken Breasts

  • 1 cup Salsa

  • 1 Onion, chopped

  • 1 Red Bell Pepper, sliced

  • 1 tsp Cumin

  • 1 tsp Chili Powder

  • Salt and Pepper, to taste

  • 8 Small Whole Wheat Tortillas

  • Optional Toppings: Fresh cilantro, avocado slices, lime wedges, shredded lettuce, and Greek yogurt

Directions:

  1. Place chicken breasts in the crockpot. Add salsa, chopped onion, sliced bell pepper, cumin, chili powder, salt, and pepper. Stir to coat the chicken with the seasoning.

  2. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender and easily shredded.

  3. Remove chicken breasts from the crockpot and shred them with two forks. Return the shredded chicken to the crockpot and stir to combine with the sauce and vegetables.

  4. Warm the tortillas and fill them with the pulled chicken mixture. Add desired toppings such as fresh cilantro, avocado slices, lime wedges, shredded lettuce, or a dollop of Greek yogurt.
