Slow Cooker Creamy Tomato Basil Soup with Fresh Basil

Serving Size: 4–6 servings

Ingredients:

  • 1 tbsp olive oil

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 2 cans (14.5 oz each) diced tomatoes

  • 1 cup low-sodium vegetable broth

  • 1/2 cup cream

  • 1/4 cup fresh basil, chopped

  • Salt and pepper, to taste

  • Fresh basil leaves, for garnish

Directions:

  1. Heat olive oil in a skillet over medium heat. Sauté the chopped onion and minced garlic until softened, about 5 minutes.

  2. Transfer the onion and garlic to the crockpot. Add diced tomatoes, vegetable broth, salt, and pepper. Stir to combine.

  3. Cover and cook on low for 4–5 hours or on high for 2–3 hours.

  4. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches and blend.
