Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts

  • 1 cup wild rice, rinsed

  • 1 large onion, diced

  • 3 garlic cloves, minced

  • 3 medium carrots, sliced

  • 3 celery stalks, chopped

  • 1 bay leaf

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1/2 tsp dried sage

  • 6 cups low-sodium chicken broth

  • Salt and pepper to taste

  • 1 cup unsweetened almond milk or low-fat milk (optional, for creaminess)

  • Fresh parsley for garnish (optional)

Directions:

  1. Rinse the wild rice and chop the vegetables.

  2. Place the chicken breasts at the bottom of the crockpot. Add the wild rice, diced onion, minced garlic, carrots, and celery on top.

  3. Sprinkle the dried thyme, rosemary, sage, salt, and pepper over the ingredients. Add the bay leaf.

  4. Pour the chicken broth over the top, ensuring all ingredients are submerged. Stir to combine.
