Makes about 2 cups = 4 side portions. Feel free to double the recipe if it’s for a larger group. Salad does not keep well - best served and enjoyed immediately.

  • 1 ½ cups watermelon, flesh cubed

  • 1 cup jicama, cubed (no skin)
