Tasty Tuscan Spaghetti Squash Side Dish Recipe
Ingredients:
1 spaghetti squash
3 cloves garlic, minced
1 tablespoon pesto
1 cup full fat canned coconut milk
1 bag of spinach
1/2 cup sun dried tomatoes, drained
1/2 cup marinated artichoke hearts
Sauce Ingredients:
Minced garlic
Sun dried tomato
Full-fat canned coconut milk
Pesto
Spinach
Marinated
Artichoke
Directions:
Slice spaghetti squash and scoop out the seeds. Drizzle with olive oil and cook at 400°F/204°C for 45 minutes.
Let spaghetti squash cool. use fork to scrape strands out.
Add all sauce ingredients into a pan and simmer for 5-10 minutes.
Combine sauce with spaghetti squash and stir together. Add any additional toppings of choice such as fresh herbs, red pepper flakes, etc.
