Tasty Tuscan Spaghetti Squash Side Dish Recipe

Ingredients:

  • 1 spaghetti squash

  • 3 cloves garlic, minced

  • 1 tablespoon pesto

  • 1 cup full fat canned coconut milk

  • 1 bag of spinach

  • 1/2 cup sun dried tomatoes, drained

  • 1/2 cup marinated artichoke hearts

Sauce Ingredients:

  • Minced garlic

  • Sun dried tomato

  • Full-fat canned coconut milk

  • Pesto

  • Spinach

  • Marinated

  • Artichoke

Directions:

  1. Slice spaghetti squash and scoop out the seeds. Drizzle with olive oil and cook at 400°F/204°C for 45 minutes.

  2. Let spaghetti squash cool. use fork to scrape strands out.

  3. Add all sauce ingredients into a pan and simmer for 5-10 minutes.

  4. Combine sauce with spaghetti squash and stir together. Add any additional toppings of choice such as fresh herbs, red pepper flakes, etc.

  5. Serve & enjoy!
