Quick & Healthy Side Dish Veggie Ratatouille Recipe
Ingredients:
1/2 Eggplant
1 Zucchini
1 Yellow Squash
1 Pint Grape Tomatoes
5 Tablespoons Olive Oil
3 Tablespoons Minced Garlic
1 Teaspoon Dried Oregano
1 Teaspoon Dried Thyme
1 Teaspoon Freshly Cracked Black Pepper
Direction:
Chop veggies and combine in large mixing bowl
Mix olive oil, garlic, thyme, oregano and black pepper.
Combine mixture with veggies and stir evenly.
Pre-heat oven to 450°F/232°C. Place mixture to baking sheet and bake for 15 minutes. Put under broiler for 5 more minutes.
Serve and enjoy!
