Quick & Healthy Side Dish Veggie Ratatouille Recipe

Ingredients:

  • 1/2 Eggplant

  • 1 Zucchini

  • 1 Yellow Squash

  • 1 Pint Grape Tomatoes

  • 5 Tablespoons Olive Oil

  • 3 Tablespoons Minced Garlic

  • 1 Teaspoon Dried Oregano

  • 1 Teaspoon Dried Thyme

  • 1 Teaspoon Freshly Cracked Black Pepper

Direction:

  1. Chop veggies and combine in large mixing bowl

  2. Mix olive oil, garlic, thyme, oregano and black pepper.

  3. Combine mixture with veggies and stir evenly.

  4. Pre-heat oven to 450°F/232°C. Place mixture to baking sheet and bake for 15 minutes. Put under broiler for 5 more minutes.

  5. Serve and enjoy!
