Mouthwatering Kale Salad with Crispy Chickpeas Recipe!
Ingredients:
1 bunch of kale, stems removed and leaves torn
1 can (15 oz) chickpeas, drained, rinsed, and dried
2 tablespoons olive oil, divided
1/2 teaspoon paprika
Salt and pepper to taste
1/4 cup grated Parmesan cheese (for a vegan version, use nutritional yeast)
1/4 cup sliced almonds
For the Dressing:
3 tablespoons extra
virgin olive oil
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 garlic clove, minced
Salt and pepper to taste
Directions:
Preheat your oven to 400°F (200°C). Toss the chickpeas with 1 tablespoon of olive oil, paprika, and a pinch of salt and pepper. Spread them on a baking sheet and roast for 20-25 minutes or until golden and crispy. Stir halfway through for even crisping.
