Homemade Dairy-free Mushroom Soup Recipe
Ingredients:
1 tablespoon of olive oil
1 onion, diced
2 cloves of garlic, minced
1 pound of button mushrooms, sliced
4 cups of vegetable broth
1.5 cups of unsweetened almond milk
2 tablespoons of all-purpose flour
2 teaspoons of dried oregano
1 teaspoon of black pepper
Directions:
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the sliced mushrooms and cook until tender, about 8-10 minutes. Stir in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
Whisk together the almond milk and flour in a small bowl until smooth. Stir the mixture into the soup and bring it to a boil. Reduce heat and simmer until thickened, about 5-7 minutes.
Remove from heat and let it cool slightly. Transfer the mixture to a blender or food processor and blend until smooth.
Pour the blended soup back into the pot and warm over low heat. Stir in the oregano and pepper.
