Veggie Chickpea Curry Recipe

Veggie Chickpea Curry Recipe

Ingredients:

  • 1 large cauliflower, cut into florets

  • 1 cup of broccoli, cut into florets

  • 2 cups of kale, chopped

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 large onion, finely chopped

  • 3 cloves of garlic, minced

  • 1-inch piece of ginger, grated

  • 1 can (14 oz) coconut milk

  • 1 can (14 oz) diced tomatoes

  • 2 tablespoons curry powder

  • 1 teaspoon ground turmeric

  • 1 teaspoon ground cumin

  • 1/2 teaspoon chili powder (adjust to taste)

  • 2 tablespoons olive oil or coconut oil

  • Salt and pepper to taste

  • Fresh cilantro, chopped, for garnish

  • Cooked quinoa

Directions:

  1. Heat the oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

  2. Add the minced garlic and grated ginger to the pan and sauté for another 2 minutes until fragrant.

  3. Stir in curry, turmeric, cumin, and chili powder. Cook for about 1 minute to release the flavors.

  4. Add the cauliflower florets and chickpeas to the pan, stirring well to coat them in the spices.

  5. Pour in the diced tomatoes with their juice and the can of coconut milk. Stir to combine everything.

  6. Bring the curry to a simmer, then reduce the heat to low. Cover and cook until the cauliflower is tender, 20- 25 minutes.

  7. Season with salt and pepper to taste.

  8. Serve the curry warm, garnished with chopped cilantro. Accompany with quinoa for a complete meal.
