Easy Minestrone Soup Recipe

Serving Size: 6-8 servings

Ingredients:

  • 1 tablespoon olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 stalks celery, diced

  • 2 medium carrots, diced

  • 1 zucchini, diced

  • 1 cup green beans, trimmed and cut into 1/2-inch pieces

  • 1 bell pepper, diced

  • 1 can (14.5 oz) diced tomatoes (with juice)

  • 6 cups low-sodium vegetable broth

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 1 can (15 oz) cannellini beans, drained and rinsed

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • 1/2 teaspoon salt (adjust to taste)

  • 1/4 teaspoon black pepper

  • 1 bay leaf

  • 1/2 cup whole grain pasta (e.g., elbows, shells, or ditalini)

  • 2 cups fresh spinach leaves

  • Grated Parmesan cheese (optional, for serving)

  • Fresh parsley, chopped (for garnish)

DiRECTIONs:

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and sauté for 2-3 minutes until the onion becomes translucent.

  2. Add the celery, carrots, zucchini, green beans, and bell pepper. Cook for about 5 minutes, stirring occasionally.

  3. Stir in the diced tomatoes with their juice. Add the vegetable broth, kidney beans, cannellini beans, oregano, basil, salt, pepper, and bay leaf.

  4. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes.

  5. Add the whole-grain pasta to the pot. Continue to simmer until the pasta is cooked, about 10 minutes.

  6. Stir in the fresh spinach and cook until it wilts, about 2-3 minutes.

  7. Remove the bay leaf and adjust the seasoning as needed.

  8. Ladle the soup into bowls. If desired, sprinkle with grated Parmesan cheese and garnish with fresh parsley.
