Coconut Lime Bars Recipe

Made with just a handful of pantry staples, this no-bake recipe comes together quickly and sets in the freezer for an easy grab-and-go option. Healthy Coconut Lime Bars (No-Bake Recipe)

Serving Size: ~12 bars

Ingredients:

  • 2 cups unsweetened shredded coconut

  • 1/2 cup coconut milk (full-fat, canned)

  • 1/4 cup lime juice (freshly squeezed)

  • 1 tablespoon lime zest

  • 1/4 cup agave syrup

Directions:

  1. Combine the shredded coconut, coconut milk, lime juice, zest, and maple syrup (or agave syrup) in a large mixing bowl. Mix well until all ingredients are thoroughly combined, and the mixture is sticky.

  2. Line an 8x8-inch baking pan with parchment paper. Press the coconut mixture firmly and evenly into the pan.

  3. Place the pan in the freezer and freeze for at least 2 hours or until the mixture is firm.

  4. Once firm, remove the pan from the freezer. Lift the mixture from the pan using the parchment paper and place it on a cutting board. Cut into bars of your desired size.

  5. Serve!
