Creamy Coconut Curry Lentil Soup (Easy Crockpot Recipe)

Ingredients:

  • 1 cup dried red lentils, rinsed

  • 1 medium onion, diced

  • 3 garlic cloves, minced

  • 2 medium carrots, sliced

  • 2 celery stalks, chopped

  • 1 large sweet potato, peeled and cubed

  • 1 can (14.5 oz) diced tomatoes, undrained

  • 1 can (13.5 oz) coconut milk (full-fat or light, as preferred)

  • 4 cups vegetable broth (or water)

  • 2 tbsp curry powder

  • 1 tsp ground cumin

  • 1 tsp ground turmeric

  • 1 tsp ground coriander

  • 1/2 tsp ground ginger (or 1-inch fresh ginger, minced)

  • 1/4 tsp cayenne pepper (optional, for heat)

  • Salt and pepper to taste

Directions:

  1. Prepare the ingredients. Rinse the red lentils under cold water. Dice the onion, mince the garlic, slice the carrots, chop the celery, and peel and cube the sweet potato.

  2. Add the lentils and vegetables. Place the rinsed lentils in the bottom of your crockpot. Layer the diced onion, minced garlic, sliced carrots, chopped celery, and cubed sweet potato on top.

  3. Add the spices. Sprinkle the curry powder, cumin, turmeric, coriander, ginger, cayenne pepper (if using), salt, and pepper over the vegetables and lentils.

  4. Pour in the liquids. Add the diced tomatoes with their juice, followed by the vegetable broth or water. Give everything a gentle stir to combine.

  5. Cook the soup. Cover the crockpot and cook on Low for 6–7 hours or on High for 3–4 hours, until the lentils and vegetables are tender.

  6. Stir in the coconut milk. About 30 minutes before serving, add the coconut milk and stir well. Continue cooking on Low until heated through and creamy.

  7. Serve and enjoy! Give the soup a final stir and taste. Adjust the salt, pepper, or spices as needed before serving warm.
