Fresh Kale and Pomegranate Salad Recipe
Ingredients:
4 cups kale, destemmed and torn into bite-sized pieces
1 cup pomegranate seeds
1/4 cup toasted slivered almonds
1 cup of mandarin slices
1 tbsp olive oil
1 tbsp lemon juice
1 tsp agave nectar or maple syrup
Salt and pepper, to taste
Directions:
1) In a large bowl, massage kale with olive oil until slightly wilted.
2) Add pomegranate, mandarin slices, and slivered almonds.
3) Whisk together lemon juice, agave, salt, and pepper.
