Slow Cooker Turmeric Ginger Chicken Soup
Serving Size: 4 servings
Ingredients:
2 boneless, skinless chicken breasts
4 cups low-sodium chicken broth
2 cups water
1 onion, diced
3 garlic cloves, minced
1 tbsp fresh ginger, grated
1 tsp ground turmeric
1 tsp ground cumin
1 large carrot, sliced
2 celery stalks, chopped
1 cup baby spinach
1 tbsp olive oil
Salt and pepper to taste
Juice of 1 lemon
Fresh cilantro or parsley for garnish (optional)
Directions:
Add chicken breasts, broth, water, onion, garlic, ginger, turmeric, cumin, carrot, and celery to the crockpot.
Cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
Remove the chicken, shred it using two forks, and return it to the crockpot.
Stir in the baby spinach, lemon juice, salt, and pepper. Let it cook for an additional 5-10 minutes until the spinach wilts.
Serve hot, garnished with fresh cilantro or parsley if desired.
