Lemon Cashew Energy Bites Recipe

Try these No Bake Lemon Cashew Energy Bites! Perfect to keep in the fridge and have handy for your busy days. 

Ingredients:

  •  1 cup cashews
  •  1 cup dates
  • 1/2 cup unsweetened coconut flakes
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon lemon zest

Directions:

  1. Combine all ingredients in a food processor, pulse until finely ground, transfer to a bowl, scraping the sides.
  2. Form into an inch ball. Keep them in an airtight container and refrigerate. 
  3. Enjoy!
